BiteTxos (pronounced 'Bite-chos') is Austin’s first pintxos bar — a bold, chef-driven concept inspired by the iconic bar culture of Spain’s Basque Country and infused with the rebellious spirit of Texas. We serve up bite-sized skewers, inventive cocktails, and a high-energy communal vibe where flavor meets fun.

Our Story

BiteTxos began with a love story—not just between founder Mark Morneault and his wife, Robin, but between two cultures.

It started on the sun-washed streets of San Sebastián, where evenings unfolded one pintxo at a time. The locals have a saying: "Bota gutxi, baina maiz", which translates to "pour a little, but do it often". So they did—wandering from pintxos bar to pintxos bar and town to town, savoring small bites, clinking glasses of Txakoli, and drifting along with the rhythm of the crowd. Graze, sip, laugh, move on. No reservations. No agenda. Just pure gastronomic joy. From the seaside bars of Getaria to the hidden taverns of Hondarribia, every stop offered something unforgettable.

Back home in Austin, that feeling wouldn’t let go. The idea took root: What if the spirit of those Basque nights could live here? What if pintxos had a Texas soul?
